Steamed Tilapia with Butter Tarragon Sauce

5 Tilapia fillets
2 Tablespoons butter
1 1/2 tbsp of Tarragon
Juice from 2 lemons
1 heaping teaspoon of sugar
dash salt  of salt and pepper

To prepare Butter tarragon sauce
  • melt butter and mix with lemon juice, tarragon and sugar
  • heat the butter tarragon sauce until reduced
Directions
Steam tilapia for 10 minutes
Sprinkle rocksalt on both sides of the fish after steaming
Pour over butter tarragon sauce
sprinkle tarragon, salt & pepper for taste if preferred
best with jasmine rice
